Tom & Jerry Batter

1 egg
1 pinch baking soda

powdered sugar
1/4 oz rum

Separate the yolk and white of one egg, beating each separately and thoroughly. Then combine both, adding enough superfine powdered sugar to stiffen. Add to this 1 pinch of baking soda and rum to preserve the batter. Then add a little more sugar to stiffen the batter.

The secret of a Tom and Jerry is to have a stiff batter and a warm mug.

From the book Old Mr. Boston DeLuxe Official Bartender's Guide, compiled and edited by Leo Cotton (Ben Burke, Inc., 1941).
