Santa Cruz Breatheasy

2 oz honey rum
squeeze lemon
Muscavado sugar


Honey Rum is avaliable in the Canary Islands and possibly from specialist importers. A substitute can be made by shaking two shots of white rum with two teaspoonfuls of runny honey with ice in a cocktail shaker. Pour the rum over ice into a highball glass (the ice should come up to the level of the rum). Carefully pour the lemon juice round the side of the glass so it floats on top of the rum. Garnish with a sprinkle of muscavado sugar.

I created this cocktail in Tenerife for a friend who was suffering from the flu, honey and lemon are traditional cold remedies, so it is medicinal as well as refreshing.
